Syphon is “a symbol of the artistic method of making coffee”, which is how many people describe the method of making Syphon coffee. Let's learn the art of this unique coffee making method with Vinbarista!
What is the Syphon brewing method?
Syphon (or possibly Siphon) is the name of a coffee maker invented by a French housewife and a Scottish marine engineer. The word “Siphon” (/ˈsaɪfən/ SY-fən – Ancient Greek) is sometimes used as “Syphon”, to refer to a variety of devices that involve the flow of liquids through pipes. Before the advent of Espresso, Siphon was a symbol of the method of pressurized coffee extraction combined with the artistry of craftsmanship in the coffee-making experience.
Over the years with varying modifications from the materials to the arrangement of the components in the Syphon dispensing kit, but the basic principles based on the physics of evaporating water have remained the same. : when heated to a high enough temperature, the water boils and pushes the steam upwards.
The type of coffee used is medium roasted coffee beans, even the roasting temperature must be lower than normal coffee roasting temperature standards. Coffee obtained after brewing with Syphon has a delicate, not burning taste when over-roasted. Coffee beans are ground into a fine powder as fine as possible because it affects the permeability of the coffee in the Syphon.

Principle of the Syphon . method
Syphon is an extremely interesting dispensing device because it acts as a water conduit, consisting of 3 main parts: the glass funnel, the glass bulb, and the heat source. The first time one sees a Syphon brewing kit, one will immediately think of laboratory chemistry experiments with two glass flasks stacked, through a glass tube. Siphon works on the principle of reverse osmosis and we can divide the extraction process by Syphon flask into 2 parts:
The first process: When using an alcohol lamp to boil water in a glass bulb, the pressure increases, when it exceeds the atmospheric pressure threshold, the steam pressure will push the water up, through the pipe to the glass funnel containing the glass. coffee powder and start the process of permeating the coffee in the water.
During this process, it is very important that the siphonista (who makes coffee with Syphon) needs to use a long spoon/spoon to stir well, so that the coffee is fully soaked in the hot water.

Process 2: When the heat source is turned off, the steam in tank 1 decreases, the pressure decreases. All coffee water will seep back into the glass bulb, the coffee powder will be retained by the filter so it won't fall down.
When brewing using the Syphon method, you will experience the extraction process with all 5 senses from sight (visual experience) to hearing (the sound of steam), the feeling of heat, and finally the smell. sense (smell of coffee) and taste.
How to use the Syphon

Medium fine ground coffee
Clean water
Carrying out the preparation
To use the siphon, you need to make sure the glass funnel and container are cleaned, the heat source can be used with a mini gas stove, a device that is very popular today in developed countries (USA, Japan, Europe). or use a traditional alcohol lamp/stove.
Step 1: Put the filter paper into the glass funnel. Make sure the filter is covered so that when the coffee from the glass funnel flows back down the glass bulb, there will be no residue.
Step 2: Secure the filter with a small hook hooked to the connecting pipe. Because the jar is made of glass, you need to be very gentle in this step.
Step 3: Pour 300ml of water into the glass bulb, then open the mini stove below to boil.
Step 4: Seal the glass funnel into the holder.
Step 5: After the water from the glass bulb penetrates into the glass funnel, reduce the heat, add the coffee and stir for 10 seconds.
Step 6: Soak coffee in hot water for about 30 - 60 seconds (soak time can be customized to your liking) then turn off the stove. The coffee in the hopper will flow through the filter paper to the glass bulb below
Step 7: After the coffee runs down, remove the upper funnel. Take out the coffee pot, shake it gently, then pour it into a cup to enjoy.
Note: Because of the direct heat source, Siphon is very hot, the bartender must always be careful throughout the extraction process.

Making coffee with Siphon is a very interesting experience, it is not only steeping coffee in water but also the process of measuring the amount of water, quantifying coffee, boiling time, osmosis time, etc. .. In Japan, mixing with Siphon is considered an art, and the bartender is an artist with a beautiful name - Siphonista.
Every year, the Japanese often hold a bartending contest for siphonistas, to choose the best one, who has a creative concoction and elusive measurement process. More specifically, the Japanese believe that the technique of stirring coffee in a glass funnel with a bamboo spoon (Bamboo stirring paddle) will also bring out a different flavor during the preparation process (According to the book The Blue Bottle Craft of Coffee).
Hario - a brand of handmade coffee tools
When it comes to the Syphon brewing method, it is impossible not to mention Hario, a brand from Japan that is world-famous for its handcrafted coffee making tools. The company has been dedicated to the design, production and sales of tempered glass since its inception and is the only Japanese tempered glass manufacturer with its own factory.
Originally, Hario was a manufacturer of laboratory glassware. In 1964, the company expanded to produce products for the home, starting with the Syphon coffee maker.
