Method 4:6 based on the division of 40% and 60% water:
Step 1: with 40% water you will make 2 pours. This 2 pours will determine the balance between the acidity and sweetness of the coffee;
Step 2: with the remaining 60% water, you can make the number of pours depending on the preferences or requirements of the drink. At this step, the amount of pour helps you get the strength of the coffee.
And today, Tetsu Kasuya brings you a concrete example with:
+ 20 grams of Gesha, Panama specialty coffee to make 300 grams of extraction with the same temperature of 92°C;
+ Use coarse coffee grinding (coarse grinding);
+ 0.33 ppm water purity and pH 6.6 will provide the perfect coffee experience.

Step 1: With 40% water equivalent to 120 grams of extract
At the first pour, Tetsu will use 50 grams and the second pour 70 grams, Tetsu wants to have a greater sweetness than sourness.
In this method, Tetsu will start the next pour when the previous one is completely finished (unlike the usual pours). This helps the coffee to be extracted more efficiently as well as providing a high quality when using coarse grinding.
Step 2: For the 3rd pour, decide on the strength of the coffee. Depending on your preference, pouring more or less water will help the coffee extract more.
According to how to grind raw coffee like today and hope to reach 1.3 TDS, Tetsu will divide it into 3 pours with 60 grams each.
This method will produce an extremely clean cup of coffee, good acidity, sweet and strong.
The taste notes obtained when brewing in the above way:
