A common question from customers learning about espresso machines is about the difference between a traditional filter funnel and a pressurized filter funnel. Actually this is not too complicated, but to fully understand the problem we need to start from the basics first.
First, the filter funnel is the part used to store the coffee when making espresso. Hot water will be pushed through the coffee "cake" located in the filter to create espresso. That's in principle, and to do that, we'll need pressure. The pressure is created when water is pumped to the ground coffee that has been compacted, that is why when making espresso, we need to grind the coffee very smooth and evenly, to create a certain resistance when the water is pushed through, creating the perfect crema foam.
The filter part is the part containing the coffee in the filter funnel. If you take this part apart, you will see that it resembles a metal jar with a hole in the bottom. These holes are where the coffee will flow through the filter and into your coffee cup. So what is the difference between the two terms "traditional" and "pressurized"?
About the definition
Traditional filter funnels will often be found in more specialized models and that is also how standard espresso cups are made. The way this filter works is the same as the principle above. In it, nearly all the resistance is created by the compressed coffee, not from the filter. Therefore, the coffee compression stage plays an essential role to create the perfect cup of coffee, then the machine will only need to pump water into the hopper. If you press too tightly or too little coffee or the coffee is not pressed flat, it will affect the quality of the coffee.
The pressurized filter funnel is more special. By applying 'artificial' methods to help create pressure to make coffee. In some pressurized funnels, that will be the bottom with small holes in the center of the sieve that slows down the extraction process. Either way, this process slows down the brewing process, allowing us to fully extract the coffee.
So which filter is more suitable?
As listed above, the traditional funnel provides the best extraction efficiency, creating the perfect cup of espresso. However, it also requires the skill of the barista to be precise as well as the smoothness of the coffee to be appropriate. This means you have to spend more time and effort to adjust everything and require a specialized coffee grinder for espresso.
The pressurized filter hopper, although not too poor quality, will not need to be too meticulous and can use coarser coffee. So, depending on your preferences, choose the right filter
