Methods of Removing Caffeine from Coffee
Coffee is decaffeinated using one of three methods: the Swiss Water Process, the Solvent Method, or the Carbon Dioxide Method. Each method employs a unique process to remove caffeine from coffee and can affect the resulting coffee flavor.
Swiss Water Process
Raw coffee beans are soaked in water heated to around 175°F (about 75°C) until at least 97% of the caffeine is removed - in Europe, it's 99%. (The standard for being considered "caffeine-free" varies by country. According to the U.S. Food and Drug Administration, decaffeinated coffee must remove at least 97% of caffeine to be labeled as such. In the European Union, the standard is slightly higher at 99%.)
The Swiss Water Process allows coffee beans to retain almost all of their flavor and aroma, unlike other caffeine removal methods.
Solvent Method
In this method, a Methylene chloride solution is used to steam open the coffee beans and remove caffeine, instead of water. The coffee beans are washed multiple times with this chemical and then dried before roasting.
Some say that the coffee beans are washed up to 10 times in Methylene chloride during this process to remove caffeine. Therefore, this method removes much of the flavor and aroma from the coffee beans due to the method itself.
This method is a relatively inexpensive way to remove caffeine from coffee and doesn't require advanced technology.
Carbon Dioxide Method
